Our favoruite healthy duo, Twice the Health, have shared with us their favourite festive recipe to get you in the Christmas spirit but don't worry, this tasty treat is 100% healthy!
Christmas is coming and the bells are ringing! Unfortunately alongside the forthcoming festivities come an abundance of not so celebratory temptations. These come packed with sugars and artificial ingredients we've worked all year to avoid. Now we're not saying these can't be enjoyed on occasion, all we're asking is you think a little outside the box when it comes to keeping Santa sweet. Lucky for you we're on hand to help keep you off the naughty list. Our 'Raw Christmas Pudding bites' offer all the delights of Christmas spice without the added guilt.
For the pudding:
1 Apple (grated)
2 Oranges (zest only)
1 Lemon (zest only)
1/2 tsp Cinnamon
¼ or ½ tsp Nutmeg
50g Almond Meal
90g Rude Health Whole Wheat Flour
For the topping:
15 Mint Leaves
15 Goji Berries
45 Almond Flakes
Blend together all the pudding ingredients.
Place mix in the fridge for an hour or so to firm up.
Roll the mix into 15 balls.
Fix a mint leaf to the top of each ball by trapping the end with a goji berry, this is to replicate the holly and berries.
Then arrange 3 almond flakes around the top to look like dripping icing/snow.
